Just removed some horrible carpet in an old cottage to find lovely dry flags in the kitchen and lounge. This picture doesn't do them justice. What is the best way to clean them up and bring out the colour? Would sealing them cause damp?

I would say a bit of mortar acid and some scrubbing first but Its depends what stone they are. If they are some sort of limestone acid will ruin them.

Any kind of yorkstone or sandstone should be fine but always test a discrete area first.

Once cleaned a bit sealing would be a good idea and shouldn't cause a problem If the floor is not badly damp already.

Again though the right type of sealer would be important. A quality impregnating type like lithofin/ weiss/ aquamix etc contact them for suitability
