Restoring stairs

Hi i'm trying to redo my stairs and i'm in the process of stripping back all the paint and am aiming for finish similar to the bottom picture.
Does anyone have any tips for trying to achieve that finish?
Basically the treads seem to be pine as do the newels but the handrail downstairs is some sort of hardwood - any thoughts what is it?

What would we the best way to get a "relatively" uniform look?

There are also large amounts of some sort of grey filler which has been used - i assume any stain or dye won't take to this, so should I scrape it all off and use some sort of pine filler on the upstairs handrail (3rd pic)?

Also any hints / tips on how to prep the wood would be great!
