Can anybody recommend a good variety of shallot for pickling? Thanks.

Golden Gourmet is very reliable from sets

I tend to sow seed to get pickling shallots, e.g. Ambition

There are specialist forums - am I allowed to promote one on here please?

No sir - but Ambition seed is expensive (it is an F1 Hybrid). Seems you are just up the damned road from me!! I am near Dufftown and have plenty Ambition seed here for the both of us. Now if I could only find a someone to point up these wee holes around the front door step
