I have been asked as part of a full rewire to install sky into every room. It is not clear at this point if it is sky or sky plus. Do you have any advice on the best method to complete these installations?

You first need to know if they want multi-room (extra subscriptions per room), or just a duplicate view of the main sky location.

Either way, if you run a pair of CT100 type coax to every TV, with 3 coax to the main location, with a telephone point at each TV too, you will be covered.

If the master bedroom has a large TV - many people opt for this these days, they you need to look to put multiroom to this, or link from the main location to this TV with an s-video, composite or component etc.

If they are going to have sky+ or HD you will need two coax per location going back to a multiway LNB at the dish

Id wire each location with a twin run of CT100 coax the first can be triplexed for SAT, DAB and Freeview and the second used for the LNB2 input on SKy+/HD.
even if they only have a basic Sky box now in the future they may upgrade.
