I'm planning on laying a stone (Cotswold / pea gravel / slate chippings) patio area. Do I need to remove the lawn before laying the weed membrane or can I install the weed membrane on top of the grass and then stones over that?

No - you need to remove all of the top soil and lay a base of hard core, then lay the patio on top of that.

if you just lay it on top of the lawn, it will go all uneven, esp after the autumn and winter. To get a good patio that will last for years you need a good deep well compacted hardcore base

Must remove the topsoil, it hold too much moisture. A compacted sub base of Type 1 followed by your chosen surface will ensure it lasts. You will find slate very difficult to sit tables and chairs on I'm afraid due to it's shape.
