We are renovating and our plumber is fitting the showers and baths - he is rejogging waste pipes. What's best way to test these? Pour a bucket of water in bath/shower and hope it don't leak?

You don't sound very confident! Pour water down them and check they don't leak is probably a better way to put it.
There's not a lot to go wrong when it comes to waste pipework as it's not holding pressure. Your plumber should have confidence in his materials and workmanship and the final check is simply running water through it. If it doesn't leak then job's a guddun.
As @nortonj mentions the correct procedure to test a waste and soil stack is to perform an air pressure leak test but that may be difficult depending on how your system is setup and what you have access to, and if you can seal the stack/run up prior to testing.
