Hi folks need to order the stuff our extension which is a single story on a bungalow

The architect has specified thermal 100mm blocks.

I have looked at the different types and they have different N rates. Whats the standard rating I should be looking at they seem to be 2.8n/mm2, 3.6n/mm2 or 7+

The figures 2.8, 3.6, 7.0 etc refer to the compressive strength of the block in Newtons per square mm.
You need to check with the designer what compressive strength is needed, as this will be dictated by the loads the blockwork is carrying.
