Tiling Question

I have just removed all of the tiles from my kitchen wall i would guess 4m2.

However i still have grout sparadically on the wall and some of the brick has come away in places. Do i have to remove all the grout off the wall before i start as it doesnt seem to want to come off.

Or am i better off getting in a Pro who will be able to skim over top??

dot an dab plaster board too rough bare brick wall, screwed fixed to wall once dry ,

then tile too this substrate ...
