Unused Flue Removal

Hi All

I have to remove an old boiler flue from roof. It is right at the ridge and the other side of ridge is a valley as shown in the attached image. What is the best way to remove the two ridge tiles. Angle grinder and chisel away at cement? Also both ridge tiles are sitting on the top of the valley cement, is it best to to reduce the height of this cement just down to the top of the tiles with angle grinder and then wet this before rebedding the ridge tiles? The flue is attached to an old boiler in the loft which has no connection to any pipes or electrics now.

You may be shocked as to how easily the ridge tiles will lift off. I know I was when I did some ! But going by the look of the valley that mortar looks quite new.
 
I am sure that once you have broken the seal between the ridge tiles they should lift off unless they were done really well by cleaning off all the dust and wetting the backs to aid adhesion - that's what I did anyway. I forgot to pre wet a couple and they lifted off clean but tried to do it after wetting them a bit and pulled off a load of mortar with them.
 
I shouldn’t be the only one advising as I am just DIY but maybe the fact that a pro has not come along means they have nothing more to add:unsure:
