Update to original attic conversion, what's the biggest amount of room space?

My house is a stone-slate roofed mid-terrace in 'uddersfield built around 1900. The attic was converted into a single room probably when the house was built or soon after.

The attic room is approx 5 metres front-to-back. There is an 'eaves' area at the front and back of the house (obviously either side of the room) that are both ~ 1.5m front-to-back.

My question is, say I wanted to make the room bigger by making the eaves areas smaller. What determines how small I can make the eaves / how big I can make the room?

Up to you; there's no legal minimum headroom in that situation.

I usually build drawers to go in the eaves, or cabinets.

the large drawers sold as "pan drawers" for kitchens are really useful in the low positions.
