Varnish/Finish to use on an art drawing board?

I've chopped up a few plywood panels to create some art drawing boards. I've been trying to decide on a water proof sealant that will be suitable for such a task. The main requirement would be to give a reasonable flat clear finish and most importantly be tough and water resistant.

Could someone recommend a decent basic tin and whether to go Polyurethane or Varnish?

Any advice much appreciated.
 
Good drawing boards normally have a slightly pliable surface and as such are lined with proper vinyl type surface or similar, drawing/writing on wood alone is unpleasant.
