I will be replacing some underground drainage pipes from the gulley outside my kitchen to the manhole. I'm thinking to buy traditional glazed clay pipes (mortar joint) as the 100-year old company WT Knowles still manufacture them.

After researching online and books I found out that tarred gaskin should be applied first in the joint before putting mortar but what is exactly tarred gaskin and where to buy it from?

Why on earth do you want to use those? Plastic will be fine unless there's vehicular traffic going over the top, in which case use 'Supersleve' clay pipes.

Not many old clay joints have that in them. They are usually just mortar.
