Hi, Just bought a new light from ikea, it's double insulated so no need for the earth wire or anywhere for it to go. How do I leave the earth wire safe?

Put it in a terminal strip (connector block) and tape it up.
Do not cut it back.

I would remove earth sleeve double the wire back on its self and replace the earth sleeve with a little tape around the end of grey insulation holding the earth sleeve to it so it will not slide off.

Tape will go manky and fall off. Properly done there should be no need for anything around the connector block, but if you really do want something in the ends and over the screws, a few dabs of silicone sealant would be removeable in the future.

Thanks for that, think i'll stick it in a connector block, tape it up and stick it back in the ceiling void? This would work & be safe?

As BAS said, tape will go bad and either fall off or leave a horrible residue. Re-use the earths sleeve already there, and terminate the cable into a connector block, and tuck it up through the hole.
