Free Range Eggs

A mate who works for an egg farm told me they aren't allowed to wash the eggs, not even allowed to wipe them clean as it's illegal

That sounds right.
The argument (which you'd have to look up, for the detail.. ) is that there's a natural barrier/ antibacterial coating on the egg which protects it. If you wash that off you make the egg shell porous to pathogens, etc, so you'd have to replace with something synthetic.
The temperature of the wash water has to be right too or bugs will pass into the egg, so they clean the eggs dry.

It's a balance thing - we vaccinate almost all commercial birds and the overall result is that there isn't a problem to solve.

It's a different philosophy in the USA, their chicken processing is different too. They let theirs get very dirty, then wash them in chlorine, and we don't. Hence we have instructions not to wash raw chicken, just cook it properly.

The instruction to not wash raw chicken is mainly to stop the spread of bacteria round the kitchen.

Sure - in the US they wouldn't say that, because they washed their chicken in chlorine. Our lot say just cook it and you'll be fine. Both practices seem to more or less work ok, take your pick.

We worked for a lady who supplied
Free range eggs to Waitrose

they would do spot checks

in one such check she was told that she could not have her dog(s)
Running around ( she did not live on the site) as they could chase / stress out the chickens ?

It's like mushrooms, you cant wash them either innit
I know that's because they absorb water like a sponge. You are supposed to wipe any compost off of them with a piece of kitchen roll.
