Can I danish oil a veneered oak door?

I'm puzzled as to why people are so set on oiling. On this sort of product, one coat of matt varnish will protect the "wood" surface and always look good whereas oil will always need further work to keep looking nice IMO. I cannot see for the life of me why oiling any timber surface that is veneered will break down the veneer glue. The main danger with oiling (and staining) veneered surfaces is that when being veneered, sometimes the glue will seep to the surface of the veneer thereby meaning that oil or stain will not take and you will get patchyness.
