I have to do some new wiring in my small kitchen, including an extractor hood over the gas hob. What if any are the limits on how close, both horizontally and vertically, I can put a switch or socket to the hob? Thanks

Building standards advise that you do not install a socket or cooker isolator over a hob, for obvious reasons.
You want to be able to isolate the cooker/hob safely if the chip pan catches fire. And to avoid trailing leads near or over the hob.
