Today I got rid of the old shed, base and lifted the slabs, I'm left with a mud patch.

Can I just spread grass seed and get a wonderful lawn?

Or do I have to flatten it?
 
You need to compact it a bit otherwise it will sink over time and be left a bit lower than the rest of the lawn. This can be done by walking in tiny steps slowly across the surface. If necessary then rake it level again and repeat the steps. You might want to leave the seeding until spring as it is probably too cold now for it to germinate.
 
Just reread your post and saw that there were slabs there before so it should be well compacted already. So a raking to break up the clods a bit and to level off should be sufficient. If you move a lot of soil in the process, some trampling to compact it again might be necessary.
 
Are you building a run on top of the area anyway? The chickens would soon turn grass back into mud (not that any grass would grow this time of year)
