What do I need to connect the waste to the drain? Just a piece of 40mm pipe & a nut?

Some of the existing pipework is solvent-weld, which you can’t change (except for cutting it).

I would avoid using a flexi; use pipe and elbows. I always worry about whether the screw fittings will fit to the solvent-weld pipe, which may have a slightly different diameter. I’m sure someone else will know for sure.

From what I've seen under those two sinks, all that is needed is an extension piece to fit between the right-hand bowl to connect with the existing compression fitting right beneath. A 40mm telescopic trap (the extension part) from Toolstation ref 98916 should do the job and if a little too long, cut down to correct length. £5.48collected in person.

I'm happy to pull it all out and replace. So I'm sure I understand correctly, it looks like the existing assembly is all attached via compression fittings and I can just unscrew, remove and replace as per the yellow markings, and then install the new assembly as essentially the mirror image, with the main downpipe and trap coming off the small sink?

If I've understood that correctly, the only issue then will be connecting the trap to the outlet at the wall, since it will now be offset to the side. I don't see any solvent-welded parts I'd need to replace.

Replace to copy the existing setup, there's no reason to alter the position of the Trap.

I'd also sort that washing machine discharge hose, it needs to rise up as high as possible under the worktop, and drop back down to the trap. This ensures waste water from the sink cannot run back into the appliance.

Not an expert, but I cannot see any value in moving the trap, from the main sink at all.
