Yes, they will definitely try to fob you off.
You need to push them in a corner
First of all, get evidence of the delay and the reason for it.
IIRC, flightaware or flightstat hold the official data for delays (and everything else) for 7 days to be downloaded free, you pay after that.
They will reject your initial claim, they do that as a standard practice.
You then will have to write a final letter before court action, basically this is the beginning of a civil claim.
After 14 days, if they've not paid up, submit a money claim online: easy, quick and cheap.
As soon as they get the court paper they'll pay up, including court fees and interests (calculated automatically).
Done this a dozen times and got compensation in all cases but one.
The only time I got nowhere was when I tried to get compensation from Alitalia (Ita Airways).
They do not have a registered address in UK, so you can't serve court papers to them.
Their address on companies house is incorrect as they've been kicked out of Heathrow some time ago.
They told me to start the claim in Italy...no thanks, civil claims in spaghettiland cost thousands and it takes at least a decade to get to court .
But in your case, easyJet has a physical address in UK, so all good.
