Well we've managed to clear things .....for now at least.
Used a toilet unblocking tool on the toilet simultaneously whilst a sink plunger was on the sink.
After lots of elbow grease all is now clear and the sink is making a wonderful gurgling sound rather than the dreaded bubble.
Only...
The only thing I haven't mentioned is that the bath had to be raised - not quite sure why. The taps also previously used to be on the end ( so the same wall as sink and toilet) but now they are on the long side of the bath. Presumably none of this would have caused an issue?

Now I'm certain the soil pipe wasn't visible. There was a big thick pipe going into the floor because I remeber a bit of a gap around it when the carpet was in there years ago ( yes hideous carpet in bathroom I know). There was definitely no pipe going from the toilet horizontally to the sink/...

I'm not quite sure if the soil pipe work is above floor level. I 'think' I recall a large pipe going downwards into the floor with the old toilet but have to be honest and say I can't be certain.

Our fitters gave us a completion quote but left it to us to buy and source all the items. They gave us no guidance whatsoever so we weren't aware of any of the above that you've mentioned.
So 'if' it does end up being the issue, which sounds quite feasible to be honest judging by our minimal...
I should also add that yes, the toilet has been put in the same place. The sink has too. However we previously had separate ones whereas this is an all in one.

They took the whole unit off including toilet and sink. They used drain roads but definitely no camera. They said that they found the kitchen roll near to the stack pipe to the right of the bath.
They are going to come out an look again this week.
I will take photographs as we go.
