Fluids like electricity will always take the path of least resistance, so it seems like the pump flow is over pumping or there's a blockage somewhere (or a valve closed).
Is the (new) pump speed the same as the old one ?

The shower mixer appears to be a push fit device to (plastic) pipe stubs in the wall. Are these standard and could I fit a different unit to the same stubs; anyone ? Indeed any recommendations ?

I'm guessing that you're going to be using ceramic tiles ?
When I've done this before I've used ply; sealing with non waterproof PVA (so that the water in the tile adhesive does not immediately leach away into the wood but still bonds) and then laid the tiles...
