Depends what you mean by "level it". If the boards are simply uneven then 3.2mm hardboard stapled/nailed is the cheapest and easiest option. If you want to correct levels in the floor to make it level overall then that is a little more complicated.

The oven is quite a few years old and I've used the cleaning function dozens of times with no problem. It may just be coincidental that it happened after using it the last time.

If it's only 1mm then a drum or belt sander will be easier than trying to pack the difference. When you sand make your first rough paper pass 5 degrees off of the straight which should level the difference between boards.
