Just getting a kitchen fitted and was wondering how high/low a chimney extractor should be, any thoughts please.

What are my options please.

I am about to get a new kitchen fitted will it be okay to mitre the worktop as iin the same position as the metal joining bar in the old kitchen in the photo, my concerns are that the mitre will be close to the sink is this a problem with water seeping into the join. Any thoughts please.
