Patio Door Sill support

I'm thinking of replacing the old sliding patio door in our kitchen diner. Its a standard size so pretty sure I can do this myself as I can tackle most things about the house. Its a Timber framed house. Been watching a few Youtube Videos and it seems there are a couple of different methods for supporting the door sill. Some seem to prefer using expanding foam once the level has been found for the sill using packers. Others seem to use Mortar bed for the sill. It would be a UPVC patio door I would be fitting, although not purchased yet. What's the best method, Foam or Mortar ?

Internal height of the floor dependant why not measure the new door taller so you have little or no gap then just seal with silicone?
