That's a three phase mixer so won't work unless your house has a three phase (industrial) electrical supply. Even if you did have this, your comment that your cable is twin and earth means you couldn't use the cooker circuit.

I would fit a piece of plywood between the joists. Then the bracket can screw into it. To fix the plywood I would cut it to just fit between the joists. Then I would screw through some scrap wood or batten to both the ply plate and the joist.

Seems technically possible, my iboost has two outputs for two immersions. You can get stickers that warn of needing to isolate at multiple points, I would want to make it really clear to someone who didn't know the house.
