I was thinking along similar lines using an Olympic weightlifting collar. The come chromed and will clamp the bar with out damaging it. They problem is the table top could spin and there would be nothing to stop any upward movement. All that said it would be a cheap and simple solution.

That maybe true of standard fixings which rely on gripping the plasterboard with the thread but these have the additional toggle on the back which spreads the load and clamps the plaster board between the fixing and the bracket. Unless the gypsum degenerates or a significant force is applied...
