Hi there, It might be a good idea to add some photos of the room/damage. If tiles have come off and damp in there the background plaster/plasterboard may have been affected. If some tiles have come loose its something that could be assumed that others are also loose or will come loose...

Humm, unsure, even like for like with new copper could take time to do all the fitting etc.. Sure on the ceilings down. In the empty house, surly they will still have to re-do all that, lifting floor boards etc, And sure on the re-fit sanitary. Still seems like a fair amount of work to do...
