buy 4" butt hinges (uncranked) and 1 1/4" x 8 screws should be enough, don't use No. 10 screws

trying to see where the 4x1" is, are you seeing the top of the newel post? as thats just a chamfer to the top of the newel. i'd lift the flooring to see if there's a way it can be fixed more square before cutting it

if you're going to re-plasterboard it, just take down the plasterboard, glasswool between the joists and re-plasterboard, but would be better double sheeted (staggering the joints) or use of fire retardant plasterboard due to being over a garage, also a upstand with fire retardant mastic butted...
