    Agreed on using the grit gear over pva, give it a tight coat of bonding, perhaps mix it with multi if it doesnt need to be too deep and once it's firmed up coat it with two coats of multi.

    Bonding doesnt like having the moisture ripped out of it, it crazes like hell and pops off so I would pva first, the day before then pva again and put if on while tacky. Why not render?

    This is the problem being a subby and putting all of your eggs into one basket, I used to rely on a firm for about 50% of my work, which at the time was only electrical work, had two employees and so on, the company changed hands and I had no work from them, Im still trying to fill some of that...

    Quick step is a good brand with a good reputation, im afraid I dont know about the other brand you mention. The fitting price seems cheap to me, Around here the date for a hallway is about £12 to £15 p/m2.

    wall or floor first?

    Personal choice, I like to do the floor first as the cuts havent got to be so accurate around the edges where the wall tiles will cover but you could damage the floor tiles if you drop a wall tiles on there.
