Have you got kids? I've seen various arrangements on our road when extending and altering the staircase. We went for a flat landing and in my opinion makes the extension feel part of the house rather than bolted onto the side.

Personally considering it's a rear extension and single storey I would just go for it. Might get shot down by other members but the council are too busy to come round and measure every extension built. Neighbours aren't going to stich you up as they won't be able to tell you breached the plans...

Quick update. Tried just dabbing a roller into the ceiling. Looked ok at first but where I had too much filler underneath it didn't look great in the end as wasn't completely flat One thing led to another and I tried running down. that led to just hacking of the paint I had put on back to bare...
