They should be fine,tiles are fired at high tempretures.
Make sure you use a flexible adhesive and grout.
Ive tiled a few fireplaces including my own and never had any problems.
If you have seen his work and think its good then take the quote.
Looking at the sq meterage you have given I would quote more but that would include adhesive,grout etc so would be a similar final price.
10mm notch on floors
Adhesive on floors is normally a 3mm bed when laid,this can be less on high spots and more on low (up to 10mm with the adhesive I use)
The adhesive should be stiff enough to mantain its shape not runny.
The floor should be flat,no rocking on the level and no dips...
What brand is the grout and what colour are you using?Grout will normally go darking if wet but should dry out
Is it water repellant or water resistant or water proof?
It could be the seal or the grout or a combination of both.Did you mark the damp area?I would cut out a hole in the ply and check behind first.
This is why tanking is always recommended in showers normally up to the height of 1m
Ive had flexi that I found at the back of my garage and used,been there for months .Worked ok only thing being that if its rapid set it will go off a bit qucker. :wink:
How many corners/cuts apart from the sockets,size of tiles,what are the tiles...porcelain,ceramic,natural stone,how many sq meters?
I would suggest that you get two or three different quotes,ask for references,pics etc.

Any new construction will settle a bit,may only be a few mm but I would say you are right to be a bit concerned.
You cannot garantee that the floor wont move as this will depend on factors like type of soil,depth of foundations closely located trees.

PVA is not advisable in a bathroom,it creates a weak link,acrylic primer is the way to go and is only a few pounds more.
And using a tanking kit is worth the extra.
Tub adhesive would not be recommended either,a powdered flexi adhesive is best.
