93 Escort EFI, missing on Acceleration

Can anybody help! My wife’s 93 Escort 1.6i with EFI has started to play up and I cannot afford to put the car in the garage.
On start up from cold it runs OK but when she drives it to the end of the road it stalls. The only way to start it is to hold the throttle down and turn it over for ages, I think the choke may be sticking on.
Secondly as she accelerates it misses (hunts) at around 2k revs. I have read the Haynes manual but yikes a bit beyond me. It talks about adjusting air mixture screws etc?
Thirdly the temp guage does not work. I have replaced the sender, is there a way of checking the guage before pulling the whole dash out etc.

Can any mechanic/ budding DIY’er please help/advise?

Check the idle speed control valve before anything else. Might be any of the sensors though.
 
If the temp guage isn't working, and the car cuts out when it warms up then the obvious thing to change is the coolant temp sender. Check with ford that the same sensor controls the fueling and the temp guage
