alternative to timber firrings

For a flat roof on a detached garage would it be acceptable to build one side a course of bricks higher and then plumb cut the ends of the joists rather than using firrings?

Just an idea - and reasons why it wouldn't work

It's fine. You just end up with a sloping ceiling internally - not an issue with a garage.
