Baxi 105e fitting wireless thermostat

Good morning I'm still using a baxi 105e with a mechanical clock . I'm thinking of replacing it with a wireless room thermostat ( it looks a easy job correct me if I'm wrong). My question is after I fit the wireless stat will the boiler just keep the burners on until the room reaches temperature or will the ch control on the boiler still control the temperature of the water in the radiators? .
 
That's 2 different functions.

The system water (CH) control on the boiler will still control the actual system water temp out to the rads.
The new stat will keep the demand for heating going (boiler running the CH) until the room with the stat in it reaches the set temp and then it'll shut the boiler down.

The only way a stat can control the system water temp on a boiler is if they are Open Therm (or similar) enabled. A 105e isn't.
