boarding over Celotex/Kingspan on solid wall

I'm in one of those almost uninsulated 1970s dormer beauties... and am DIY renovating most of the house. It's a big house, and so to reduce the volume of air I need to heat and provide insulation, I am planning on framing, insulating, plaster boarding then skimming my walls - i.e. moving all my walls in by 100mm or so and also improving my insulation.

However - I'm now starting to wonder if sticking something like celotex or kingspan to the existing walls, and then sticking PB to the front of those would give me as decent a finish as the stud walls I have already done.

What are your thoughts? I sort of imagine it cracking at joints and it being useless for hanging photos and shelves on!
