I've put up a stud wall, but what do I fill the gap at the top with. I was thinking it should be caulk to allow for movement in the joists, but is this wrong?

Fill it up with joint filler. Put a length of self adhesive joint tape over it when it's set, and then put a couple of coats of joint finish over that and sand it down. The proper way would be to tape it, half on ceiling, half on wall.
Or coving - there are some really good high-density polystyrene coves about with a really nice, smooth, paintable finish. Just throw it up with No More Nails equivelant (I use Mega grip), takes less than a quarter of the time as tape & skim, even that traditional plaster cove is quicker (though a bit more expensive). And (unless you've a big down on coving!) gives a much better finish
