Ceiling support after breast removal

I’m going to get a builder in to remove a couple of chimney breasts (stacks already removed) but wanted to know if the builder will be doing things right. What is the way to support both ceilings after removal? At the moment the ceilings are resting on a lip on the chimney breast.

I went out and bought 2 of these today woody, but can't work out to support the ceiling with them.
