Chimney breast plaster

Missus went out and bought a unit a few months back but between the wall and chimney is 179.7cm and the unti is 180cm. I measured it before she bought it and didn't even think of a .3 out. As the middle where I measured was 182.
My question is can I knock the plaster off which is 15mm add another edge and plaster to a 10mm depth? Also are the edging these days not as pronounced? Tia

Yes imo.
Don't recognise that edging.
I have skimmed with hardwall then a 3mm bead.
Another way.
You can get 6mm plasterboard and stick on with foam or board adhesive and skim
