Are they acceptable to extend cable runs if they are well taped over and of the correct rating for the cable? I know it sounds amateurish but I got some cable I can utilise.

If you are referring to round cable, extensions are best connected with a Torpedo Connector.
Otherewise as Adam says Terminal block enclosed in a chocbox.
