Crumble plaster

I went to fit the handrail on the stairs and when i drilled in to the plaster it just crumbled. So if i knock off some of the plaster back to the brick will sandcement mortar be ok to fill the hole or is there something better to use.

You can use sand/cement render.
But it is common place now to use bonding, browning or hardwall as base coat (undercoat). When one of these products are applied, leave the coat about 3 to 5mm lower then your finished wall and finish of with multi-finish plaster.
If the repair does not cover a big area, a one coat plaster may do you, this will mean no base coat will be need, but some times more than one coat is needed.
