I have built up a small stash of scrap dhw plate heat exchangers. What are they made of? Are they worth seperating for non-ferrous scrap, or do they go in with the steel?

Why are they scrap?
They have a small value if sold on Ebay for those who want a spare to clean.
Depending on what they are from and why they were removed I might even be interested in buying them. But you would have to email the details to me.

Separate them from your Ferrous and weigh them in!!
