Would an earth wire attached to the hot tap pipe under a bath trip the circuit if it was wet?
 
No unless there was a fault. Hope you have an earth leakage circuit breaker in consumer unit preferably about 30mA to protect you from fatal shocks on faults.
You should connect/bond hot water side to cold water side and earth this if usual metal pipes. I usually use 16mm throughout (although IEE specifies only 10mm)to save me carrying a variety of earth cables. 16mm is needed for main earthing terminal to consumer unit.
