I have recently brought a new cooker hob to replace my old one, which has several different wiring diagrams on the back.
First of all which one do I use?
I have taken my old hob out and I think it was wired up Neutral(3) - Red wire, Live(2) - Black Wire and Earth(4) - Green/Yellow wire.
Red is live and black is neutral and therefore this doesn't seem right.
Please Help!!!!

2nd one one down on the left, no not that one the other one

look at the other end of that cable you have dangling, inside the cooker switch, it may have been connected wrong there too. If not, wire it up as before, there is no problem with this, except confusing someone at a later date (as you are now)
