engineered wood kitchen floor after cabinets

I'm planning on laying an engineered wood herringbone floor in my kitchen. The cabinets are not being removed but the doors, plinths, end panels, etc are being replaced.

My plan is to remove the plinths and end panels and lay the flooring up to the feet of the cabinets and then install the new end panels and plinths.. Is that the right way to do it given I am not removing the cabinets?

Thats what I did when I laid my floor but I was unable to remove one tall end panel without removing the built in fridge-freezer so I trimmed the bottom with a multi-tool and slipped the flooring under that.

That's also what I did. Although, why not cut down the existing plinths and end panels?

New ones will still need to cut to fit?
