Filling gap round stud frame to brick wall

I've stud walled a door way and theres big gaps round the edge, especially where the old door frame had wooden wedges. can I just use expanding foam? Can foam be ut back and then taped and plastered over by a plasterer?

could you not get it more flush than that? what is the depth of the plasterboard to the face of the wall and how wide is the gap from edge of board to the wall?
