I've been looking into that, there are grey areas, the answer seems to be no. I intend to get it weighed in the next few weeks to make sure it's still within the legal max weight for that van, 3500 kgs.
I thought I had to re-register it with DVLC as a motorhome, which would have been good because that would have done away with the mandatory 10mph less than the speed limit on trunk roads which applies to commercial vehicles, but dvlc changed the criteria for motorhomes, because of the height of mine, and the fact it doesn't have a pop up roof, mine wouldn't qualify as a motorhome. It does seem that I should notify dvlc that I've added windows, to reclassify it as a 'van with windows'.
I haven't added 240v power pick up so haven't checked any requirements for that, all the electrics are 12v and I have a gas bottle installed for the hob and can find nothing on a gas safe check being required.
Everything I can find on the subject is 'vague and opaque', it does seem to me that dvlc are creating a situation that doesn't increase their workload.
Obviously for factory built conversions there are different rules but for diy jobs it all seems a bit lax, which is surprising given the numbers that exist, since doing this, I've developed an eye for spotting campers that aren't obviously campers, there are a hell of a lot.

Cornwall council have brought in new restrictions prohibiting overnight parking in some areas, other coastal areas seem to have embraced it. It seems there is a fear of what's happened in Bristol, whereby large areas of 'permanent van dwellers' are springing up.

It's an interesting subject.
 
I tell a lie! I’ve just been browsing through some old photos and 13 years ago I went with some mates and our wives to Turkey. It was all inclusive and included water sports etc. There was a massive yacht moored a fair way from where we were staying that had helicopters coming and going from it. As the 'experienced' sailor I talked my mates into sailing over to it so off we set. We got just over halfway towards it when some staff from the resort we were staying came out to us on a speed boat and told us to come back, we weren't allowed to go near the yacht. I'm in the red cap giving out the orders and guess who was on board the yacht!
