Foil Insulating an existing ceiling - HELP!

I have an attic room that I am renovating. The roof is slate with no felt or membrane of any kind. The old latt and plaster ceiling is attached to the underside of the rafters. My question is:

I want to overboard the ceilings and skim as the plasterwork is not in good shape. Can I sandwich a layer of foil insulation between the existing ceiling and the oveboards, and if I can I assume I will need an air gap of 25mm both sides??? All help appreciated. I live in the UK in a cold winter climate.
