gable end bridging

I'm making good a (very) poorly built 90's extension roof, and fitting a dry ridge and dry verge.
the gable end wall is all over the place - i.e. 50mm gap between batten and roof at the outer, and -30mm towards the ridge - this is due to the inner wall being HIGHER than the rafters towards the centre. i'm going to build up the top of the walls/cut down where needed, but not sure what to do about capping of the gable cavity wall - i'm fitting a dry verge, so no mortar going in; but should i put some f/c board over the cavity once i've levelled it out to match the rafter line, or should i just build up the outer wall to rafter lineand trap the membrane between outer wall and batten?
