The size of frame fixing is relative to the weight of the gate. Overkill is better than chancing it and the gate hanging off the next day. If its a standard ledged and braced gate then you just put the hinges in the middle of the crossbars. For a gate you should look for about 8 - 10mm clearance round the gate. 2" 1o screws are probably the best size to use and these are usually a pozi 2 screw bit but this all depends on the manufacturer. As for stops they are not essential but are preferred if using an automatic latch as it stops the spindle for getting ripped off the gate. If using a slip bolt they are not essential.
 
Is the right place on the tee hinge to hang, the bit just before the knuckle, so it does does move on the post

The sort of middle bit, not sure on the correct name

if you fix the hinge so that the knuckle doesn't touch either the gate or the post you should be fine. It just stops the hinge from binding on the gate or the post.
