My plasterer sprinkles water with a garden hose on to the thermalite blocks, which absorb water like crazy. He says if he does not do that the blocks simply pull out all the moisture from the hardwall causing cracks within very short time. When I say "sprinkles", I mean literally drenches, and inevitably some water drops on the floor etc.

The finished product (hardwall + multifinish) takes many days to dry, and looks fantastic, amazing silky and smooth, but as I know nothing about plastering, are there any gotchas that might come to bite me in the future?

He is right. The damping reduces the suction from the blocks and avoids the plaster being sucked to death.

His tales of crack and craze is probably bonding applied to such blocks,, bonding is for low suction backgrounds.
